Quick & Easy Christmas Gingerbread Biscuits!

Ingredients

For the Gingerbread Biscuits:
● 350g plain flour
● 1 tsp bicarbonate of soda
● 1 1/2 tbsp ground ginger
● 1 tsp ground cinnamon
● 125g butter, softened to room temperature
● 175g brown sugar
● 1 large egg
● 4 tbsp golden syrup (or honey if you prefer!)

For the Icing (optional, for decorating):
● 1 large egg white
● 200g icing sugar (sifted)
● Food colouring (optional)

Method

Step 1: Prepare the Dough
1. Mix the dry ingredients – In a large bowl, sift together the flour, bicarb soda, ginger, and cinnamon.
2. In another bowl, beat the butter and brown sugar until light and fluffy.
3. Add the egg and syrup – Mix in the egg and golden syrup or honey to the butter mixture until well combined.
4. Combine wet and dry ingredients – Gradually add the flour mixture into the butter mixture, mixing until a dough forms.
5. Chill the dough – Wrap the dough in cling film and refrigerate for at least 30 minutes. This is essential as it helps firm it up, making it easier to roll out!

Step 2: Shape the Biscuits
1. Preheat the oven – Set your oven to 180°C (160°C fan).
2. Roll out the dough – On a lightly floured surface, roll out the dough to about 5mm thickness.
3. Cut into shapes – Use festive cookie cutters (like stars, Christmas trees, or gingerbread people) to cut out shapes. Place the biscuits onto a lined baking tray, leaving some space between each one.

Step 3: Bake
1. Bake the biscuits – Place the tray in the oven and bake for 10–12 minutes or until the biscuits are ready. Keep a close eye on them as they bake to prevent overcooking; they should be a golden-brown colour when done!
2. Cool – Let the biscuits cool on the tray for a few minutes, then transfer them to a wire rack to cool completely.

Step 4: Decorate!
1. Prepare the icing – In a bowl, whisk the egg white until it is slightly aerated and holds soft peaks. Gradually add the sifted icing sugar, a spoonful at a time, until the mixture is smooth. Add a few drops of lemon juice to help it set and, if desired, divide into smaller bowls to mix in different food colourings.
2. Decorate – Use a piping bag or a small plastic bag with the corner snipped off to decorate your biscuits with festive patterns.

These gingerbread biscuits are best enjoyed fresh but will keep in an airtight container for up to two weeks. If you’d like to give them as gifts, place them in a festive tin or wrap them in cellophane with a colourful ribbon!
